Camillo’s Pizzeria
After experiencing various European dishes in Delhi and recognizing the need for simple yet expertly prepared offerings, Camillo’s decided to expand its menu with dishes that are both easy to understand and crafted with a unique culinary style. Our head chef, Chef Sudeep, whose vision is to serve comfort food that is both presentable and straightforward, has been instrumental in developing this new menu. These new dishes, which stand out due to our in-house preparation methods—ranging from making ciabatta to tortillas and incorporating techniques like smoking, compressing, and fermenting—include highlights such as compressed pineapple tartare, stracciatella bruschettas, soft shell crab aglio e olio, and cacio e pepe pizza. We also offer gluten-free options like tacos and burrata salad, with vegan options available upon request. For beverage pairings, we recommend Thai iced tea with the wood-fired seabass.
Despite the introduction of these new items, all our old favorites remain on the menu. Camillo’s differentiates itself in the competitive restaurant industry by maintaining complex mise en place and presenting simpler dishes, all made in-house, in contrast to many places that rely on packaged ingredients. Notably, our pizza dough undergoes more than 30 hours of fermentation. High-resolution images of the new dishes are available upon request.
