After you have made some feta cheese, storing it correctly is important to prevent it from drying out or going off. Feta cheese is a fresh, unripened cheese. It can be made from sheep, goat or cow's milk.
Put the feta cheese into a sealed container. Pour in any accompanying liquid (brine) and top up with more brine if needed. Place the lid on firmly.
Place in the refrigerator for cool storage.
Consume within 3–4 days of purchase. Feta cheese is supposed to be eaten fresh, within a few days of purchase.
Cover with olive oil for longer lasting cheese. This can also be flavoured with fresh herbs, spices, peppercorns, etc.
