Have you ever tried any Sindhi cuisine? If not, you’re in for a treat! Recently, UK-based chef Jake Dryan introduced a delightful twist to a beloved Sindhi dish called Aloo Tuk. Last year, he shared a video on social media where he prepared this traditional delicacy, which quickly gained popularity. Now, inspired by its success, Jake recreated the magic of Aloo Tuk, this time with a healthy twist.
Jake begins the clip by introducing his take on a healthier version of Aloo Tuk, a beloved Sindhi dish. “Today we are making a healthier version of aloo tuk. It is an amazing Sindhi recipe. Basically, mashed potatoes that have been fried and tossed in spices,” he said in the video.
He then goes on to prepare the dish starting with a box full of boiled sweet potatoes. He explains his method of storing boiled sweet potatoes so that he can use them whenever he wants. Later, he demonstrates smashing the sweet potatoes with a mug to flatten them. After drizzling them with oil, he places them in the air fryer at 200 degrees Celsius for about 20 minutes.
While the potatoes were cooked, Jake prepared his spice blend, mixing together turmeric, chilli powder, coriander powder, amchur (mango powder), black salt, and regular salt. Once the sweet potatoes are crispy enough, he sprinkles the spice mix on top, followed by another drizzle of oil. Adding chopped green chillies and coriander leaves, he gives everything a good mix. And there you have it—a healthier rendition of Aloo Tuk, ready to be enjoyed.
