Briyani is undoubtedly the ultimate comfort food of India. So much so that 2.5 biryanis were ordered per second on Swiggy in 2023. Such is the love for this yummilicious meal. Wondering, why are we talking about biryani today? We have come across a video that has given a classic twist to this dish. Presenting, blue-coloured ghee rice. Oh yes, you read that right. Shared by a popular food vlogger on Instagram, the video captures the meticulous preparation of butterfly ghee rice. First, she is seen washing butterfly pea flowers and then separates the petals. Then, she soaks 1 cup of rice for a few minutes. Next, she boils water in a pot and adds the petals to it.
Next, in a separate vessel, she heats some ghee and incorporates spices, bay leaf, cashews, raisins, chopped onions and sliced green chilies. A few second later, she adds the cooked blue rice to the pot. Finally, she serves the butterfly pea rice with a side of raita.

Since being shared, the video has garnered an impressive 13.3 million views online.
A user said “God I would never eat that.”
