With summer round the corner, you cannot just rely on icy drinks to cool your body. Instead you can add cool and vitamin-loaded fruits and vegetables to your diet.
You can easily add these fruits and vegetables in your menu by making a scrumptious salad. Here are few nutritious, and refreshing summer time salad you can try at home:
1. Carrots, Radishes and Courgettes Salad:
Ingredients:
Carrots
Radishes
Courgettes/ zucchini
Small red onion
Mint leaves
White wine vinegar
Dijon mustard
Mayonnaise
Olive oil
Method:
Take a large bowl and add grated carrots.
Add thinly sliced radishes, courgettes and finely chopped onion.
Mix all the vegetables together in the bowl with the mint leaves.
Take another bowl and Whisk together the vinegar, mustard and mayonnaise until.
Gradually whisk in the oil.
Add salt and pepper.
Add this dressing over the salad and mix well.
Your salad is ready to be served.
2. Watermelon Salad
Watermelon has high water content, which will not just keep you hydrated and refreshedbut will also protect the skin against sun damage.
Ingredients:
Extra-virgin olive oil
White balsamic vinegar
Kosher salt
Spinach leaves
Red onion
Tomatoes
Feta cheese
Watermelon chunks
Method:
Take a small bowl and whisk the olive oil, white balsamic vinegar and salt together.
Take a large bowl and add spinach, onions, and tomatoes.
Pour the vinegar over the salad.
Add feta cheese and watermelon.
3. Vegetable and Fruit Salad
Ingredients:
Green pepper
Celery
Cabbage
Red apple
Red grapes
Mayonnaise
Salt
Method:
Take a large bowl and chopped green pepper, celery, cabbage, red apple and red grapes.
Take a small bowl and mix mayonnaise and salt.
Add this to the vegetable and fruit mix.
Cover and refrigerate for at least 1 hour.
4. Corn Salad
Ingredients
Corn
Tomatoes
Onion
Fresh basil
Olive oil
White vinegar
Salt
Method:
Take light salted water in a pot and bring it to boil.
Cook corn kernels in the boiling water.
Take a large bowl and mix corn, tomatoes, onion, basil, oil, vinegar, salt and pepper.
Mix well and keep it in the refrigerator.
Serve it.
5. Mango Salad
Also know as the king of all fruits, mango is the most sought-after summer fruit.
Ingredients:
Mangos
Lime juice
Extra-virgin olive oil
Red pepper flakes
Fresh cilantro
Shallots
Salt
Black pepper to taste
Method:
Cut the mangoes in cubes and place it in serving bowl.
Take another bowl and whisk together lime juice and olive oil.
Season with red pepper flakes, cilantro, shallots, salt and pepper.
Pour over the mangos.
Mix well.
Cover and refrigerate for 30 minutes.
