 Jhangore Ki Kheer

Cooking time: 20 min

Nutritional value:

1. Calories – 188

2. Protein – 3gm

3. Fat – 12gm

4. Carbs – 17gm

Ingredients:

1. 15 gm Himalayan millet

2. 10 gm jaggery

3. 500 ml coconut milk

4. 1 tsp ghee

5. 1 tsp cardamom powder

Method:

1. Heat ghee in a thick-bottomed pan and sauté the millet for 4-5 min.

2. Add coconut milk and jaggery.

3. Cook on a slow flame while stirring to prevent curdling.

4. Once the millet is well cooked and the pudding is thick, turn off the flame and add cardamom powder.

5. Serve hot, garnished with pistachio powder.

Beetroot Chocolate Cake

Ingredients:

1. 200 g shredded coconut powder

2. 15 soaked dates (retain the water)

3. 400 g grated beetroot

4. 50 g coconut powder

5. 200 ml almond milk

6. 80 g raw cacao

7. 200 g yogurt

8. 1 tsp baking powder

9. 1 tsp vanilla

10. 200 g dark chocolate

11. 100 g coconut cream

12. 1 tbsp virgin coconut oil

Method:

1. Mix all dry ingredients in a bowl and set aside.

2. Blend dates and add them to yogurt along with vanilla.

3. Fold dry and wet ingredients together.

4. Bake the mixture in a preheated oven for 30 minutes at 180°C.

Almond Dates & Coconut Laddu

Cooking time: 10 min

Ingredients:

1. 5 almonds (soaked and deskinned)

2. 5 dates (soaked)

3. 4 tbsp fresh grated coconut

4. 1 tbsp dried desiccated coconut

5. 1 tsp ghee

Method:

1. Heat ghee in a pan, then add the puree of dates and almonds.

2. Add freshly grated coconut and cook for 10 minutes.

3. Turn off the flame and let the mixture cool down.

4. Make small laddus and coat them with dried coconut.

5. Serve with jaggery syrup.

6. Blend melted dark chocolate, coconut cream, and virgin coconut oil, then refrigerate. Add frosting to the cooled cake.

Diabetic-friendly Dates Barfi

Ingredients:

1. 500 gm seedless dates

2. 200 gm pure ghee

3. 100 gm cashews

4. 100 gm almonds

5. 100 gm walnuts

Method:

1. Roast cashews, almonds, and walnuts in pure ghee.

2. Finely chop the dates and roast them in pure ghee.

3. Mix all the ingredients well and let them cool down.

4. Set the mixture in a mold and put it in the freezer for 2 hours.

5. Once set, remove from the mold and cut into desired shapes.
