Kaipuli Chutte Pajji, a type of chutney, is made from roasted bitter oranges which are very popular in Kodagu, Karnataka. It has many purifying and healing properties and is commonly prepared for new mothers for whom it is always on the menu. It is also known as Pethavada Pajji.
Kaipuli Chutte Pajji is roasted over the fire which enhances its pungent aroma and bitter-sweet taste. The cooking methods used by the ancients add elegance to the Karnataka kitchens even today. Here’s how to make this dish.
Ingredients
Medium-sized handful oranges
4 garlic cloves
1/2 teaspoon cumin seeds
1/4 teaspoon fenugreek seeds
1 onion
1/2 teacup jaggery
2 tablespoons cooking oil
1/4 teaspoon mustard seeds
2-3 curry leaves
Oranges preparation
Before cooking them in the pot with the other ingredients, you need to prepare them. First, you need to rinse them. After washing, peel them and remove the bitter white core. Discard the seeds and chop the orange’s pulp and peel. You will need a sharp kitchen knife for this. Cut the peel into thick or thin slices, depending on what you prefer.
How to Prepare Kaipuli Chutte Pajji?
1) Spread a medium handful of flour all over the area like you do when making Banana Bertha.
2) Remove the charred peel and seeds, crush the pulp add 1/2 teaspoon of salt and keep aside.
3) Heat a deep pan.
4) After heating the oil, add the mustard seeds. After crushing the mustard, add the other spices one by one.
5) Add onion, cumin, garlic, fenugreek and curry leaves.
6) Prepare the chutney and stir the spices for 1 minute then add the roasted kaipuli pulp and mix well.
7) After that, add salt and jaggery syrup and cook for 1 minute.
8) Now you can get hot kaipuli pajji at affordable prices. It can be enjoyed with white rice.
