Green Chilli Thokku is a delectable pickle made from green chillies, spices and tamarind. Renowned for its intense spiciness, this pickle complements a wide array of dishes and serves as a versatile accompaniment. Commonly enjoyed as a dip with dosa, idli, or rice, many enthusiasts favour pairing Green Chilli Thokku with curd rice. The traditional recipe calls for a spicy variety of chillies, although individuals are advised to select the chilli variety according to their tolerance levels to prevent stomach acidity. Crafting Green Chilli Thokku is a straightforward process that demands only 20 minutes of cooking and preparation. To initiate the preparation, gather the following ingredients:

Green chillies: 150 grams

Inexpensive Red Bull Chilli: 10-15

Mustard: 1 spoon

Asafoetida powder: 1 tablespoon

Tamarind: 25 grams

Powdered jaggery: 1 tablespoon

Curry leaves: a bunch

Ghee: 2 tablespoons

Groundnut oil: as required

Rock salt: as per taste

Commence the preparation by heating oil in a pan and adding chopped green chillies. Stir until they turn golden-yellow, indicating thorough frying. Then, introduce seeded red chillies to the mix and fry until they also attain a golden hue. Once both are fried to perfection, transfer them to a plate to cool.

After cooling, grind the fried chillies into a paste using a mixing jar. Next, in the same pan, heat oil, add mustard seeds and curry leaves and fry them. Incorporate asafoetida powder and mix well. Subsequently, add the ground chilli paste along with water and bring it to a boil. Follow this by adding rock salt, powdered jaggery and tamarind paste, stirring continuously until the mixture thickens. Once it no longer adheres to the pan, add two tablespoons of ghee and turn off the stove. Transfer the prepared Thokku into an airtight container for storage.
