Oatmeal, Raisin, and Pistachio Cookies recipe by Tara Bhushan, Executive Chef, Club Mahindra Munnar
Ingredients:
- 30 g Raisins
- 30 g Pistachios
- 15 g Oats
- 100 g Butter
- 100 g Sugar
- 1 Egg
- 100 g Refined wheat flour
Method:
- Rub together butter, flour, and sugar until well combined.
- Mix in oats, raisins, and chopped pistachios to form a thick dough.
- Chill the dough in the refrigerator for 30 minutes.
- Preheat the oven to 200°C.
- Roll the dough into small balls of about 35 g each.
- Place the balls on a baking mat.
- Bake for 15-20 minutes until golden brown.
- Allow the cookies to cool slightly before serving.
Raisin Sweet and Sour Salad recipe by Chef Ishijyot Surri, Executive Chef, SJI Hospitality and Foods Private Limited
Ingredients:
- 1 cup Quinoa
- 1 ¾ cups Vegetable broth
- ½ cup Raisins
- ½ cup Chopped fresh parsley
- ¼ cup Chopped almonds and walnuts
- Salt and pepper, to taste
Orange Dressing:
- ¼ cup freshly squeezed Orange juice
- 2 tablespoons Olive oil
- 1 tablespoon Apple cider vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon Honey
- Salt and pepper, to taste
Method:
- Rinse quinoa and cook it in vegetable broth until done.
- Mix all dressing ingredients together to make the orange dressing.
- In a bowl, combine cooked quinoa, raisins, parsley, and nuts.
- Pour the orange dressing over the salad and mix well.
- Season with salt and pepper.
- Serve immediately or chill in the fridge before serving.
Dates and Raisins Chiffon Cake recipe by Tara Bhushan, Executive Chef, Club Mahindra Munnar
Ingredients:
- 100 g Butter
- 3 Eggs
- 250 g Refined wheat flour
- 50 g Raisins
- 50 g Dates
- 200 g Sugar
- 3 g Baking powder
- 2 g Lemon zest
- 3 g Cinnamon powder
Method:
- Remove seeds from dates and cook with raisins and a little sugar; allow to cool.
- Cream together butter, sugar, and eggs.
- Mix in the cooked dates and raisins.
- Sift flour, baking powder, lemon zest, and cinnamon; add to the mixture.
- Pour batter into a greased tray.
- Bake in a preheated oven at 180°C for 30-45 minutes.
- Allow the cake to cool before serving with a dates and raisin sauce or dusted with icing sugar.
