Method:
Peel and finely chop garlic and 2½ onions. Cook in olive oil in a large pan until soft.
Add grated carrots, sea salt, black pepper, and mixed spice. Cook until soft and sweet.
Add butter beans, mash, and mix in most of the feta. Cool the mixture.
Preheat oven to 200°C/400°F/gas 6. Unroll pastry, place filling down the center, and fold over. Seal edges, brush with milk, and score lightly.
Bake for 25 minutes until golden. Serve with a salad of lettuce, remaining onion, carrots, feta, oil, vinegar, salt, and pepper.

2 eating apples (300g)

Method:
Preheat oven to 200°C/400°F/gas 6. Defrost berries and drain.
Chop apples into cubes. Mix butter, flour, oats, and half sugar to make crumble topping.
Combine berries, apples, and remaining sugar in a baking dish. Top with crumble mix.
Bake for 25 minutes until golden. Serve with vanilla ice cream.

Ingredients:
1 slice stale thick white bread
Olive oil
½ head broccoli (180g)

½ lemon
150g dried spaghetti

1 x 125g tin mackerel in tomato sauce
30g mature Cheddar cheese
Method:
Make breadcrumbs from bread, fry in olive oil until crispy, and set aside.
Cut broccoli and garlic. Cook pasta and add broccoli for the last 2 minutes.
Sauté broccoli stalks and garlic with chilli flakes. Add mackerel and pasta water.
Toss pasta with mackerel mix, cheese, and lemon juice. Top with breadcrumbs and lemon zest.
One Pan Spicy Chicken with Sweet Onions, Peas & Fluffy Rice
Ingredients:
1kg chicken thighs
2 onions
2 tablespoons tikka masala curry paste
1 x 400g tin plum tomatoes
300g basmati rice
500g frozen peas
1 x 400g tin light coconut milk
Method:
Brown chicken thighs in a pan, then remove skin. Cook onions, add curry paste, then tomatoes.
Stir in rice and water. Simmer with chicken for 12 minutes.
Add peas and most coconut milk. Finish with remaining coconut milk. Serve with crispy chicken skin.
Freezer-Raid Fish Pie with a Crispy Potato Top
Ingredients:
2 medium eggs
480g frozen spinach
1.5kg potatoes
Olive oil
1 onion (100g)
1 carrot (100g)
30g plain flour
500ml semi-skimmed milk
2 teaspoons English mustard
80g mature Cheddar cheese
520g frozen white fish fillets
2 x 400g tins baked beans
Method:
Boil eggs, defrost spinach, and cook potatoes in the microwave.
Cook onions and carrots, stir in flour, then add milk to make a sauce.
